On the nose, gold delicious apple, dark honey, nectarine and a hint of grassiness. The mouthfeel is creamy and medium-full bodied, but there is plenty of mouthwatering acidity as well. The Sauvignon Blanc comes through more on the palate than the nose, with warmer climate tropical fruit notes mixing with some of the malic flavours of the Chardonnay and Macabeo. The oak is not prevalent, but adds a lovely smooth and rounded character. A great partner to roast pork or fall stews.
This is a proprietary blend using the mouthfeel of Macabeo, the richness and weight of Chardonnay and the aromatic intensity and fresh acidity of Sauvignon Blanc. The altitude and cool nights, coupled with the long amounts of daytime sun, allow for full ripening of these varieties without becoming too sugar ripe and weighty.
Utiel-Requena is a Spanish Denominación de Origen Protegida for wines located in the province of Valencia. It takes its name from the two neighbouring towns of Utiel and Requena and is renowned for the predominant use of the Bobal grape variety. Although these wines are moderately contemporary, the region is anything but. Traces of Phoenician amphorae suggest viticulture and wine production here date at least as far back as the 7th century BC.
Chozas Carrascal is a family winery with the Pago Chozas Carrascal Designation of Origin. Due to its elevation and proximity to the Juan Navarro mountain range, which contributes dominant northern winds, it is one of the coldest areas in Valencia. The extension of the Sierra Juan Navarro to the southeast slows down a large part of the clouds that come from the Mediterranean loaded with water so rainfall at Chozas Carrascal is less than in other areas of the region. The vineyard relies greatly on the south western facing sunlight, radiating more than 3,000 hours of direct sunlight per year.
Each variety was vinified separately. After 8 hours of skin maceration to extract pigment and character, the wines begin their fermentation in concrete eggs. They are then transferred into French oak where they received twice daily bâtonnage for the first few months. Prior to bottling, they are blended in oak where they receive a little extra aging to knit together.
